If you're like me, you're always searching the pantry, fridge, and freezer for a sweet treat that doesn't leave you feeling guilty. That's why I keep these 'lil guys on hand! They satisfy the craving while being lower in sugar and carbohydrates, with a little snap of protein too.
Ingredients
1 ¼ cup no salt added canned chickpeas, rinsed, strained, and dried
½ cup peanut butter, natural, no salt, creamy
¼ cup orange blossom honey (or whichever you can find)
2tsp vanilla extract
1tsp baking powder
½ cup dark chocolate chips
Pinch of salt
Instructions
1. Preheat oven to 350F. Prep a baking sheet with parchment paper and set aside.
2. Add chickpeas, vanilla, peanut butter, honey, baking powder, and salt to a food processor or blender. Blend until smooth.
3. Remove blade and fold in dark chocolate chips.
4. Use a cookie scoop to portion dough out onto your baking sheet. Flatten slightly with a spoon or the bottom of a glass. *Cookies will not change shape while baking.
5. Bake for 10 minutes or until just golden brown along the edges. Allow cookies to cool for a few minutes on baking sheet then remove and place on wire rack to cool fully.
6. Enjoy!
